Sometimes you crave buffalo chicken wings but you know that it doesn’t fit into that healthy diet you are trying to follow. You know, the one with more veggies, no deep fried foods, and more fiber. This salad is my way to follow that commitment and still have the flavor. I am a strong believer that moderation is the key. If you deprive yourself of something, when you finally splurge, you will probably go overboard. Eat this salad. Feel good you ate veggies and baked chicken. Enjoy that buffalo chicken flavor you know you really want. :)
Buffalo Chicken Salad
- 1 1/2 cups arugula (I love this green for it’s spiciness)
- 1 small boneless skinless chicken breast, baked with your desired spice blend
- Salad fixings of your choice (I used kalamata olives, sweet onion, cherry tomatoes)
- Frank’s Red Hot sauce
- Ranch dressing
Arrange greens, chicken and toppings on a plate. Add desired amount of ranch and Frank’s. Enjoy!
