Hoppin’ John is a tradition Southern dish that tastes wonderful and is cheap to make. The combination is believe to be the US version of the West African combination of rice and beans. Regardless of it’s origin, it quickly became the traditional New Years Eve dish when served with greens. It is an excellent recipe both in taste and simplicity. Total cost is less than $5 per serving.
- 1 package of kielbasa sausage, sliced (You can use ham or even lean bacon for this.)
- 1 onion, chopped
- 2 cloves garlic, chopped
- Dash of red pepper flakes (optional)
- 2 cans black eyed peas, one can drained well
- Cooked rice
