This time of year we all eat way too many fatty, high calorie foods. My stomach needed some actual nutrients and fiber. I love this recipe because it is quick, healthy, and tasty. Serve with tzatziki sauce. I will post a recipe later in the week for that.
Greek Portobello Pitas
- 4 large portobello mushrooms, stems removed
- 8 pita pocket halves
- Thin slices of red onion
- Roasted red pepper
- Greens of your desire (I used arugula)
- 4 slices of desired cheese
Preheat oven to 400 degrees. Place mushrooms in a glass baking dish and spray generously with Pam. Sprinkle with desired seasonings (I used garlic, onion, salt, and cayenne pepper). Bake for 10 to 15 minutes. Top mushrooms with cheese slices when removed from the oven. Stuff each pocket half with one half mushroom and the desired amounts of onion, red pepper, and greens. Serve with tzatiki sauce.
